Ingredients
  

  • 1 8 oz package cream cheese, softened
  • 1/4 cup ½ stick unsalted butter, melted
  • 1 15 oz can whole kernel corn, drained
  • 1 15 oz can creamed corn
  • 1/2 tsp garlic powder optional
  • 1/4 tsp ground black pepper
  • 1 sleeve Ritz crackers about 30 crackers, crushed
  • 2 tbsp melted butter for topping

Method
 

  1. Preheat oven to 350°F (175°C). Grease an 8x8 or 9x9 baking dish.
  2. In a mixing bowl, combine cream cheese and 1/4 cup melted butter until smooth. You can microwave them together in 15–20 second intervals to help them blend.
  3. Stir in both cans of corn, garlic powder (if using), and pepper. Mix well.
  4. Pour the mixture into the prepared baking dish and spread evenly.
  5. In a separate bowl, combine crushed Ritz crackers with 2 tablespoons melted butter.
  6. Sprinkle the buttery cracker crumbs over the top of the casserole.
  7. Bake uncovered for 30–35 minutes, or until the edges are bubbling and the top is golden brown.
  8. Let cool slightly before serving.

Notes

  • You can add shredded cheddar cheese (about 1/2 cup) into the mix for a cheesier casserole.
  • For a spicy kick, mix in a few diced jalapeños or a pinch of cayenne pepper.
  • Easily double the recipe and bake in a 9x13-inch dish for larger gatherings.
  • This dish reheats well in the oven or microwave — great for leftovers!
  • Substitute crushed buttery club crackers if Ritz are unavailable.
