- Make the marinade: In a bowl, whisk together olive oil, lime juice, garlic, brown sugar, allspice, paprika, cumin, cayenne, salt, and pepper.
- Marinate the salmon: Place salmon fillets in a shallow dish or resealable bag. Pour marinade over them and let sit for at least 15 minutes (or up to 1 hour in the fridge).
- Cook the salmon:
- Skillet Method: Heat a nonstick skillet over medium-high heat. Add salmon (skin-side down if skin-on). Cook for 4–5 minutes per side until golden and cooked through.
- Grill Method: Preheat grill to medium. Oil the grates and grill salmon for 4–6 minutes per side.
- Serve: Garnish with fresh cilantro and lime wedges. Serve hot with rice or tropical sides.
Notes
- For a sweeter twist, brush with a little honey during the final minute of cooking.
- Skin-on salmon helps retain moisture but can be removed if preferred.
